Like all root crops, beets are magical—when they grow like they're supposed to! They have the added bonus of tops that are almost as tasty as the roots.
Sow one month before last frost date, as soon as soil is workable. Soak seeds for 24 hours before sowing. Work seedbeds 8 inches deep; sow 1/2 inch deep and thin to 4 to 6 inches apart.
